Hot Sauce Committee

Has anybody tried making their own?
Used to make a sweet chilli sauce but always fancied making something hotter,currently growing some Trinidad scorpion chillies so.would be nice to make a sauce should I get a decent crop


I made it to go with wings in foresters a while back.

Blitz raw chillies/peppers (with seeds n white bits) with salt, garlic, brown sugar and water.
Into a jar for 4/5 days til it starts to ferment n bubble up.
Skim it, then cook it in some vinegar til you get the consistency you're after.

I passed it off but some folk like it gloopy.

The Trinidad scorpion chillies were mental hot,put a quarter of one in a pot of chilli and struggled to eat it,gave some to one of my sons pals dad's who makes chutneys it brought on an asthma attack!
Don't think I'll bother with them next year

Had them a couple of times Hammi, liked them but my goodness there was an occasional one that was particularly hot.

I suggested to Nic it was deliberate to encourage more peeve. He didn't deny it.
