Cheese

How many have you tried? As the Bounce resident Flavour Consultant,* I trust your judgement.

* I remember Gregg Wallace describing himself as such. 😆
I have only had Black Bomber and Red Storm which are top class in their respective categories. Isle of Mull Cheddar is another absolutely top Cheddar btw.

I must urge you in particular not to not let one of the servants serve these straight from the fridge. These have to be savoured at room temp as you know, but the difference it makes to Red Storm is night and day.

Looking forward to hearing about the others, especially the cave aged felly.

Quite right totally different taste, texture and a more genuine aroma.

Enjoy.

Will do. The cheeses came with a nice little booklet explaining what wines or beers to pair with them. Also serving instructions as you outlined above. I will adhere to them rigorously.

Just finished the Red Storm with a rather tasty Rioja Gran Reserva. Señora Panza had got in there first so there was hardly any left! Sensational stuff. I always remember Red Leicester as quite mild but that has the full slap in the puss of an extra mature cheddar. If the others are even half as good I'll be delighted with my purchase. 🧀 🤘

I love cheese, of all sorts, although some of the really strong stuff plays havoc with my digestion these days.

Having said that, when it comes to a simple cheddar or red Leicester cheese.... the Supermarket 'basic' ones I find just as good as the labelled ones, and are mucho cheapo.

I mind Baby Bel was seen as being a bit posh though, so unlike a good cheese although I've matured, and possibly got a bit smelly, I haven't aged well.

I went through that crisis today. Do they smell Docish or like cheese?

Awaits attack

Latest cheese update Eegie. Had the Red Devil on nachos yesterday. Superb. It's the Red Leicester turbo-charged with habanero chillies. You're going to have to buy it now, aren't you? 😆

It’s tempting! I’m looking forward to you getting onto the cheddars now. I’m really curious to see how the rock one stacks up to the black bombed. I’m not sure I like the idea of a garlic cheese. That one will be interesting !

Just had the Rock Star cave aged cheese. Quick capsule review:

If you’ve not already tried it, look for their ‘Red Storm’ take on Red Leicester. Cracking stuff.
Sadly, Snowdonia didn’t have a stand at Turriff this year but this company did. Their mature cheddar is like finding your missing football sock that’s been under the bed for 6 months. Lovely stuff and straight from the fridge.

Excellent. I'm genuinely interested in a comparison to the black bomber if and when you are inclined.
So. Finally tried them side by side with a very indulgent Brunello di Montalcino.
The Rock Star is sharper and saltier than the Black Bomber which is slightly sweeter and smoother. Suspect the Rock Star is 'younger'. Both excellent though. I've enjoyed all the ones I bought. Will be making more purchases from Snowdonia in the future. Thanks for the rec. 👍

Fuck the cheese. Did you enjoy the Brunello?

Felt like being good to myself today so I cracked open this little beauty. Black Gold from the Damn Fine Cheese Co. Beautiful creamy cheddar with charcoal. Top class.

Do you have blue veins as well, Doc?

I know you are a man of culture.
