Flights rarely fly in a straight line from a to b, the flight to Galway may fly much closer to Scotland than you'd imagine. It's possible that Prestwick has been best equipped to deal with emergency situations because any such emergency will divert there rather than flying to a busy passenger airport near large urban area.

Prestwick and Stanstead are both designated to deal with kidnap/terrorist alerts.

Reason being that they both have more or less the longest runways in the UK. Any potential threat can therefore be taken as far away from public risk as possible, hence the reason that the planes are parked in the middle of nowhere when you see them on TV or in the papers.
